Potato Pancakes

Potato Pancakes This is one of my quick and easy ways to use leftover mashed potatoes. These pancakes are a delicious addition for the savory pallet. I often serve them with a German accent of sauerkraut. 2 cups mashed potatoes 1 egg 3 tablespoons dried minced onion 2 tablespoons fresh chopped dill salt and pepper to taste Olive oil Mix together all the ingredients. Herbal Lemonade Lemonade always depicts “summer time” refreshment to me.  This is a recipe that my sister-in-law, Cathy, brought to one of our cookouts.
