Potato Pancakes
This is one of my quick and easy ways to use leftover mashed potatoes. These pancakes are a delicious addition for the savory pallet. I often serve them with a German accent of sauerkraut.
2 cups mashed potatoes
1 egg
3 tablespoons dried minced onion
2 tablespoons fresh chopped dill
salt and pepper to taste
Olive oil
Mix together all the ingredients. Then spoon small amounts into a skillet with a generous amount of olive oil… enough so the pancakes don’t stick. Brown each side and serve.
Yum, I never thought of serving potato pancakes with sauerkraut. I love both. Thanks.
Your taste buds will thank you! 🙂
Love you!
PERFECT!!
i have some leftover mashed potatoes from last night and thought about soup but this sounds so much better. Just need some lean corned beef on rye and I’m at IZZY’s
Nice to hear from you Michael! How did your pancakes turn out?
I hope you are doing well and had a blessed Christmas!
