Potato Pancakes
This is one of my quick and easy ways to use leftover mashed potatoes. These pancakes are a delicious addition for the savory pallet. I often serve them with a German accent of sauerkraut.

2 cups mashed potatoes
1 egg
3 tablespoons dried minced onion
2 tablespoons fresh chopped dill
salt and pepper to taste
Olive oil

Mix together all the ingredients. Then spoon small amounts into a skillet with a generous amount of olive oil… enough so the pancakes don’t stick. Brown each side and serve.

    i have some leftover mashed potatoes from last night and thought about soup but this sounds so much better. Just need some lean corned beef on rye and I’m at IZZY’s
