From time to time, I cut back on carbs to drop a few pounds. One day, I decided to try making a meatloaf without the oatmeal or bread crumb fillers that spike up the carbohydrates. I was so pleased with how this recipe turned out, I wanted to share it. It takes about 5 minutes to assemble, is juicy and is a real “comfort” food. I hope you enjoy it as much as we do.
Turkey Meatloaf – Low Carb

1.5 pounds of ground turkey meat
1/2 cup dried onion flakes
1/4 cup dried garlic chips
1 tsp. salt
2 eggs
2 tsp worchester sauce
1/3 cup dried parsley
1 tablespoon olive oil
1 cup shredded cheddar cheese
Thoroughly mix together all the above ingredients – I use my hands.
Press into a loaf pan – mound the top a bit
Bake at 350 degrees for 45 minutes.

Looks good! I’m not familiar with dried garlic chips, though. Are they available in regular grocery stores, or should I look for them somewhere else?
