Winter Squash is a vegetable that is readily available this time of year in most grocery stores. I often like it roasted plainly with olive oil, however, it’s nice to spice it up with this easy butter drizzle from time to time.
One large winter squash – use any kind – acorn, butternut, etc.
Slice into 1/2 inch slices and spoon out any seeds
Lay flat on cookie sheet
Brush top with olive oil to keep them from drying out as they bake.
Bake at 375 degree for 20 -30 minutes…until tender when inserted with fork
Spiced Butter
By Leann Albrecht
1/2 cup melted butter
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
Sweeten to taste – honey or brown sugar. I use Stevia to keep it low carb.
Arrange the squash on a platter and drizzle it with the Spiced Butter. Serve hot.
