Glorified Escalloped Corn

This corn dish is a great addition to any meal. My friend, Rachel, introduced this recipe to me over 30 years ago. In fact, her soiled hand written recipe card is proof that I make it often for our family meals. It’s also a wonderful substitution for potatoes or rice.

 

 

 

 

Glorified Escalloped Corn

1 egg  – beaten well

Then add:

1/3 cup oil

8 ounces sour cream

1 can cream style corn (14-15oz)

1 can regular whole kernel corn – drained

1 box Jiffy Corn Muffin Mix (6-7 oz box)

1 teaspoon salt

Mix all ingredients together well. Pour into greased casserole dish then lightly sprinkle the top with paprika and basil as shown in the above picture.

Bake at 350 degrees for 35-40 minutes or until it is set.

    • Hi Deborah…..I guess that’s a sign of a great recipe!! My friend Rachel gave it to me over 30 years ago and it had been one of her family recipes for years before that. ….hard telling who originally discovered this amazing dish. I’m just glad we get to partake of it’s corny essence. 🙂
