This recipe from my sister-in-law, Debbie Hendrickson, makes a great snack or a main cereal at breakfast. I’ve enjoyed it at her table many times.
Deb’s Granola Crunch
½ cup butter – no substitutes
¼ cup honey
1 teaspoon vanilla
1/3 cup water
3 cups old fashioned oatmeal
1 cup shredded sweetened coconut
½ cup sunflower seeds and/or pumpkin seeds
1 cup pecan pieces
1 cup powdered milk
½ cup wheat germ or oat bran
¼ cup brown sugar
In large pot – heat butter, honey, vanilla and water and stir.
Combine next 7 ingredients to the warm liquid and mix thoroughly.
Spread out and bake in 2 – 9X13 baking dishes
Bake 40-60 minutes at 325 degrees – stirring often until golden brown in color.
After baking the granola, let it completely cool before storing in airtight containers.
Optional:
Add ½ cup raisins or craisins
