“Angel” Shortbread Cookies

This is the recipe I wrote about in the song “What Christmas Means To Me”  from my jazz Christmas CD called “The Greatest Gift”. Go to my store now. This Saturday, my friend Linda and I will be making these cookies in the shape of angels and other Christmas shapes, while listening to one of my favorite Nat King Cole CDs.

These cookies are light in texture but rich and delicate, similar to the English shortbread tea cookie. I hope you enjoy them as much as we do.

 

  “Angel” Shortbread Cookies

3/4 Cup soft butter (no substitutions)

1/4 Cup sugar

2 Cups all-purpose flour

Heat oven to 350 degrees.

Mix butter and sugar with mixer till fluffy. Then mix in flour. If dough is too crumbly, mix in 1-2 Tbsp more soft butter. Use hands to form into a ball and remove from the mixing bowl.

Using a rolling pin, roll to 1/4 inch thick on lightly floured surface. Make sure to also flour the rolling pin to keep it from sticking to the dough. Use whatever shape cookie cutter you would like or cut in rectangles. Press the cookie cutter into the dough then remove each piece and place it on a greased cookie sheet.

Bake at 15-20 min until set but NOT brown. Remove immediately and cool on flat nonstick clean surface. I use wax paper.

Note: If making Christmas shapes, drizzle with a mixture of powdered sugar and milk. Put in zip lock bag and cut a small hole in the corner to release a fine stream of icing. Drizzle with one plain, one red and one green bag of icing. It makes a beautiful display of color for the holidays….as you see here below
