Aunt Dorothy’s Pancakes

2 Cups –  buttermilk, plain yogurt or Kefir (room temperature)

2 Eggs

3 TBSP – oil

Whip together with a fork.

 

Another bowl combine:

1 3/4 Cups – flour (or any combination of flour ie: spelt, oat, wheat)

1/4 Cup  – any combination of oat bran, wheat germ or milled flax seed

1 Tsp salt

2 tsp baking powder

1 tsp baking soda

Mix together well.

Combine both dry and wet ingredients. Spoon batter into round portions in a hot skillet.

 

Optional:

3/4 Cup chopped nuts -ie: walnuts, pecans, macadamia nuts

1 thinly sliced banana

fresh blueberries – (not frozen fruit – it slows down the process of the rising ingredients)

 

Top with 100% pure maple syrup, honey or fruit compote.

Serves 4
