Carrot Stir Fry

1 large onion – diced

2 – 3 cloves of garlic

2 tablespoons of olive oil or organic coconut oil.

In skillet, lightly brown onion and garlic until tender in oil  ..about 3-4 minutes.

 

Then add:

1/2 bag of organic regular carrots – peeled and sliced diagonally about 1/4 to1/2 inch thick OR 1 bag of organic mini carrots

1 tbsp dried basil – stir in
salt and pepper to taste – I always use course sea salt
Cover and let steam-cook until carrots are tender – about 20 minutes

This recipe serves 4 people as a side dish and adds great color to any plate of food.
